Healthy Fudge Chocolate Bars

One of my favorite things to do in my free time is search the web for new recipes. The other day I was checking this blog I like Chocolate Covered Katie, she had a guest post from Nutritionist in the Kitch for Healthy Eatmore Fudge Chocolate Bars. I decided to make them today and gosh they are so good! It’s tough to find recipes out there for healthier desserts that don’t have all that weird stuff in them. By weird stuff I mean chick peas, black beans random ingredients like xanthan gum- I know that some will swear you can’t taste it and you’d never know it was in there but…Im the one making them and just knowing that it’s in there I would be too chicken to try them and it would be a waste. As for the other ingredients I really hate it when a recipe looks good but then calls for a bunch of ingredients I will rarely if ever use and would have to find or order online just to make it. It’s especially crazy when I look at a list and don’t even know what some of the ingredients are and have never heard of them.

Now this is a truly good for you dessert and it tastes really good and is easy to make the only negatives I could add from making them today are

  • make sure you have a good food processor to blend all the ingredients really well, if you don’t then like me chop the nuts before hand to make it easier

  •  in my personal opinion I could taste the banana in these (but not the dates) I actually thought these tasted more like yummy chocolate covered bananas not fudge 

I adjusted her recipe to accommodate what I had on hand and also I used less sweetener because I don’t like my dessert overly sweet. This recipe is great because its not only super healthy but also easily adaptable. 

Recipe:

  • 1 cup pitted dates
  • 1/2 cup almonds, unsalted
  • 1/4 cup pecans, unsalted
  • 1/4 cup unsweetened cocoa powder
  • 2 ripe bananas
  • 4 tbsp natural almond butter
  • 1/4 cup more unsweetened cocoa powder
  • 2 tbsp unpasteurized honey (could sub out for agave or other sweetener)
