I found this recipe in Vegetarian Times and made it the other night for dinner. Lately my daughter has been grabbing the spoon out of my hand to try and feed herself. This new development has led me to try and find some finger foods for her to eat. At her 9-month visit the pediatrician okayed tofu and so this recipe was great to introduce to my little girl and healthy to have for dinner. Tofu is a great source of protein and is very soft, perfect for babies just starting solid food and learning to chew. Also even though I don’t have a grill I do have a panini press which worked just fine for the tofu!
