I love huevos rancheros it has all of my favorite flavors and is easy to whip together for breakfast. I made mine with eggs over easy but they are equally delicious scrambled the choice is up to you and your preferences.
What you need:
- 2 eggs
- 2 tortillas
- 1 avocado sliced
- salsa * I like mine hot n spicy
- cheese – cojita, cheddar, pepper jack, queso blanco the choice is yours
- salt n pepper
First thing to do is preheat your pan and turn the oven on to 300 degrees. Place your two tortillas on a baking sheet and top with cheese. Next butter your pan and crack eggs in. If making over easy then let them sit at medium low heat until firm and the whites are cooked. If making scrambled crack eggs in a bowl and add a splash of milk, whisk together and pour into buttered pan. For nice fluffy scrambled eggs use this technique, as the eggs cook keep pushing the uncooked egg towards the center. I used to wait too long and would scramble my eggs at the end, don’t do it! Anyway, once your eggs are done take them off the burner. Take your nice hot tortillas out of the oven and divide your eggs equally one on each tortilla. Then top with avocado slices and salsa, salt n pepper. That’s it all done unless you might want more spice and some hot sauce to kick it up a notch.
